Responsible for the overall management and operation of the contract.
Acts on the company's behalf in all on-site related contract decisions.
Carries out supervisory responsibilities in accordance with company policies, government contracts, and the applicable federal and state laws.
PRIMARY
Responsibilities:
Oversee the day-to-day operations at the institution-style/cafeteria-style facility.
Plan for and purchase food for food service program.
Ensure food in storage meets adequate levels of nutrition and sustenance.
Maintain required records including food production, inventory, income/expense, meal counts and personnel records.
Ensure program follows proper sanitation procedures.
Preside over food service employees, including cooks, food preparers, mess attendants, and other employees.
Ensure safety standards are maintained while food is being cooked.
Plan menus; Prepare and serve the food.
Respond to customer preferences and complaints.
Plan and budget for future meals.
Maintain equipment, including refrigerators, stoves, and microwaves.
Hire, recruit, and train employees.
Direct the cleaning of the dining area and kitchen including the utensils.
Maintain employee records, prepare payroll, and complete paperwork to comply with laws and regulations.
Keep records of supplies and purchases.
Qualifications:
Three to five years proven experience in large volume food service operations or credited military experience in a senior foodservice management position, (grade E-8 or above), and completion of a senior level military foodservice management school.
Degree from a recognized university or a college level culinary degree.
Proven experience in personnel and operational management.
Sanitation certification from an accredited institution.
The ability to analyze, and interpret contractual documents, financial and payroll reports, and government regulations.
The ability to respond to inquiries from customers, regulatory agencies, or government personnel.
Computer (software and hardware) literate, with a good working knowledge of Microsoft business and E-Mail applications.
Familiar with employee management, grievance procedures and negotiations.
